HEALTHY NEW YEAR'S CHIPS
New Year’s means it’s time to celebrate! It’s a new year, a new chance to be everything you’ve ever wanted, and not to mention, an opportunity to pop a bottle of champagne! Who doesn’t love that? In the spirit of the festivities, we’d love to share this incredibly versatile recipe for zucchini chips. They’re easy to make, super healthy, and are a great addition to any New Year’s celebration.
The best part about making your own chips is you have complete control over the flavor. You can toss them in BBQ sauce, Ranch dressing, hot sauce, or virtually any combination of seasonings with a bit of olive oil. For this particular recipe, we made ours with salt and vinegar.
What you’ll need:
4 cups thinly sliced zucchini (about 2-3 medium)
2 tablespoons extra virgin olive oil
2 tablespoons white balsamic vinegar
2 teaspoons coarse sea salt
How to do it:
Slice your zucchini as thinly as possible (a mandolin helps).
In a bowl, whisk your olive oil and vinegar together. Then drop in the zucchini, and toss until completely coated.
Line a cookie sheet with parchment paper, and lay the zucchini out evenly.
Sprinkle with sea salt.
Back at 200 degrees F for 2-3 hours. Rotate halfway through cooking.
You can store the chips in an airtight container.
These chips are our favorite, because they are so easy to make, way cheaper than store bought chips, and healthy to boot! Plus, they give us so much room to experiment will different flavor combinations. However, if you’re looking for some good, plain style chips, you can just cut out the vinegar.
