A HEALTHIER ALTERNATIVE: ROASTED MASHED CAULIFLOWER

If you love mashed potatoes, but are looking for a healthier (and possibly tastier) alternative, you’ve come to the right place. Ever since we stumbled upon this recipe for garlicky mashed cauliflower, we haven’t gone back.

Ingredients:
·       1 bulb of garlic
·       2 tsp olive oil
·       1 head of cauliflower
·       ½ cup unsweetened almond milk + more to thin (or milk of choice)
·       heaping ¼ cup plain Greek yogurt
·       1 tbsp. butter, melted
·       ½ tsp salt
·       pepper to taste

Instructions:
reheat the oven to 400 degrees F.

Slice off the top of your garlic bulb, drizzle 1 tsp olive oil over the top, then wrap in foil.

Chop cauliflower into florets and toss with remaining olive oil.

Bake cauliflower and garlic for about 30 minutes, flipping the cauliflower halfway through.

Allow to cool a little, before blending in a food processor the cauliflower, garlic, Almond milk, yogurt, butter, salt, and pepper until smooth like mashed potato.  

If you want to make your mashed cauliflower really special, consider folding in some different veggies like chopped green onion or chopped peppers. You could also top with hot sauce or maybe even a bit of cheese.

It’s healthy, delicious, and easy to make. Sorry potatoes; we’ve found a new favorite side dish.
