AVOCADO CHICKEN SALAD LETTUCE WRAPS
Since it is the day after Valentine’s Day, there is a very good possibility that you are eating an abnormal amount of chocolate. We certainly are, so to lighten up today’s diet and to bring our focus back to health, we are sharing this recipe for Avocado Chicken Salad Lettuce Wraps. They are light, healthy, and way tastier than traditional chicken salad, which is often swimming in mayo, and Team 30Fifteen is obsessed.
Here’s what you’ll need:
1 ripe, peeled, pitted avocado
1 tablespoon of lime juice
2 tablespoons of minced cilantro
2 tablespoons of minced red onion
½ teaspoon of garlic powder
2 cooked, boneless, skinless chicken breast
Salt and pepper to taste
Lettuce leaves (Butter Lettuce works best)
How to make it:
First is the prep which involves pealing, pitting, mincing, and cooking. For an added layer of flavor, you can grill your chicken, but pan frying works great too. Cut the chicken into ½ inch cubes. Mash the avocado with lime juice, and then mix in the remainder of the ingredients before dishing it into the lettuce and serving. It’s as easy as that!
